After being asked by a few customers for some recipes we thought it would be a good idea to issue a new recipe every Thursday!
The recipes are designed to be nutritious, tasty and easy to make.
With this in mind, we believe that having simple ingredients to start with significantly reduces the amount of fat, sugar and salt you eat which surely can only be good for you?!
Anyhow, here goes...
Sausage casserole (serves 4)
This takes roughly 15 minutes to prep and a further hour to cook.
I love this all in one sausage casserole recipe and is perfect for a mid week meal especially at this time of year!
4 large potatoes
8 beef sausages (we of course recommend ours)
2 tbsp rapeseed oil
1 large onion, chopped
1 garlic clove, crushed
pinch of chilli flakes (optional)
400g can chopped tomatoes
400ml vegetable stock
Turn your oven to 180°C/fan160°C/gas 4 to pre-heat. Peel the potatoes and cut them into quarters. Peel the carrots and cut each carrot into bite sized pieces.
Heat your oil in a heavy-based casserole and fry the sausages, turning often, until they are lightly golden all over – this should take roughly 10 minutes. Remove the sausages from the pan and put them to one side.
Add the chopped onion to the casserole (there should still be some oil in the pan from the sausages) and continue to cook over a low heat for 5-10 minutes, until the onion is slightly soft. Then add the garlic and chilli flakes (if you wish) and cook for another minute.
Add the chopped potatoes and carrots and stir everything around in the casserole so that the vegetables are coated with the oil.
Finally add the tomatoes and stock. Bring to a simmer and return those sausages to the casserole.
Using oven gloves as your dish will be quite warm, put the casserole into the oven. Cook for 45 minutes, until the potatoes are cooked through, and then serve.
